Why I'm Breaking Up With Carbs...

My low carb journey to weight loss!
I'm addicted to fried foods, and things smothered in chili and cheese! It doesn't help that I'm from TEXAS, home of the Fried everything! I'm 5'5 and my goal is to lose about 75lbs. AND I'm getting married next October and I want to look fabulous in a wedding dress!!
I'm blogging the entire experience here. Now for most, this would be easy, buy some veggies, grill your chicken and beef for the week for lunch, dinner, etc. But here is the thing, I do NOT cook, ever! Which is probably the main reason why I'm where I'm at, I lived off of fast food, and I still do. I eat out every single day of the week, so it's a bit more challenging for me to be on this new low carb diet. Oh yeah, it's not a diet, it's a "lifestyle change". Tuesday 1/22/2013 Dinner

Today I actually cooked! Well sorta. Tonight we made pizza! We found a low carb flat bread that has only 5 carbs per flat bread, and it tasted amazing! I used 2 tablespoons of Classico pesto (4 carbs per 1/4 cup= 2 carbs per 2 tablespoons) as my sauce and Jose used Ragu cheesy classic Alfredo sauce (2 carbs per 1/4 cup=1 carb per 2 tablespoons)  as his sauce, both low carb especially compared to your ordinary marinara sauce. We bought mozzarella cheese shredded (0 carbs) and piled it on. Then we added our toppings, I added pepperoni (0 carbs)and Jose added some lunch meat ham slices (0 carbs) and left over grilled chicken (0 carbs)  from a bbq we had last week. We popped them in the oven at 350° & at 10 minutes the cheese was melted and the edges were crunchy, next time I will bake on a pan with the holes in it to get the whole thing crunchy. The result, a thin crust pizza! You can definitely put a pizza sauce instead of how we did it, just make sure it is on the lower side as far as carbs go.
Here is my 7 carb pizza & Jose's 6 carb pizza! They were BIG, filled us both up!

Monday 1/21/13

Well today I would have had a bun-less burger but my wonderful fiance accidentally cancelled my debit card while trying to cancel his card because he thought he lost his, I don't carry cash on me and the banks were closed today for MLK. So I was lazy and watched the inauguration till my fiance came home and then we went to Luby's for dinner. I had the chopped beef steak with a side salad and green beans. He had baked fish with cabbage and a salad which are all good low carb choices. After that we stopped at our local new Kroger grocery store, we found so much low carb stuff and bought ingredients to make a low carb pizza tomorrow! I can't wait! We came home and had some Breyers vanilla carb smart ice cream!

Sunday 1/20/13

Sunday we had a late brunch at Don Luis, a little Mexican restaurant around the block. I had eggs and bacon with a little bit of refried beans.
We basically napped until dinner, which I know is bad :/ We went to Wings N More for dinner, I had the grilled chicken Caesar salad, it's one of my favorites! My fiance had hot wings which is also a great alternative if you are watching your carbs. TIP: Make sure you are ordering bone in naked wings. Boneless wings are usually breaded and have lots of carbs!! And the hot sauce that the wings are tossed in typically has 0-1 carb.

Saturday 1/19/13

Saturday I had a bun-less double Texas whopper from Burger King. It was delicious as always, crisp bacon, two patties, cheese, lettuce, pickle, tomato and mayo. For dinner we went to Texas Roadhouse, I had a mushroom chicken but I asked for the mushroom sauce in the side, I'm glad I did because I ended up not liking it. So without the sauce it was still covered in Monterey jack and parmesan cheeses. Very good, I had with this a side salad. I also ordered a cup of chili as my other side but ended up not eating it because it was too spicy.

Friday 1/18/13

Friday we had a date night. Started out at a local hamburger grill, I had an open chili cheese dog with lettuce, then we headed to ride go karts & played laser tag which I really enjoyed and came in 3rd out of 10!! After that we headed to the drive in movie theater to watch this is 40. After the movie we were ready for dinner but it was really late, we headed to BJ's for pizza. I had a gluten free pepperoni pizza, I only eat the tops off the pizza but I ordered gluten free because I've never tasted gluten free bread, it didn't taste bad at all! I think once I reach my goal weight, I won't have any problem eating gluten free!

Thursday 1/17/13

Lunch was Chick Fil A, again. My mom got lunch today and that's where she picked. I had a bun-less grilled chicken club, lettuce, chicken, cheese, pickles, and bacon. I mixed up a little mayo and mustard to do it in. For dinner I had Mexican food at Teotihuacan Mexican Cafe in Houston, Tx, I had the pollo Ranchero, it's a grilled chicken breast covered in ranchero sauce and has melted Monterey jack cheese, I substituted the rice for double beans, charo & refried, and it comes with guacamole & tortillas which of course I did not eat the tortillas. I did eat a little of both beans.

This upcoming week I need to focus and work on FIVE things.
#1- Drink more water!! I'm really bad about this, and water is a key factor while on a low carb diet
#2- Get myself in a routine that involves going to bed at a decent hour, not sleeping in until lunch time, I need to wake up and eating breakfast! I've only been eating lunch and dinner, and I know that is not good. And it's because I stay at home, so I don't get up for work or anything which equals me sleeping in, must work on!!
#3- Eat more times per day. Even though I feel like I am already eating alot, I need to add not only breakfast, but a mid morning snack and an afternoon snack. Something like sugar free jello, Atkins bars, Atkins shakes, or even almonds would work for snacks.
#4 Eat more veggies! I don't eat nearly enough veggies, besides my love for salads, I'm not getting any other kind of vegetables in there!
#5- Must try new things! This kind of goes hand in hand with eat more veggies... I've never tasted CAULIFLOWER! I need to make this happen soon because there are sooooo many low carb recipes that look so good that call for cauliflower! And I must learn to like broccoli more... that is all for now!

Wednesday 1/16/13

Today I was up at 6am full of energy, thanks to the sleep aide I took last night, which was good because I had a lot of running around to do today. I had lunch at chick fil a, I usually order a bun-less grilled chicken club, it comes wrapped in lettuce, cheese, tomato, pickle and bacon. But today I just went with a bun-less grilled chicken burger with extra pickles, no tomato, wrapped in lettuce (which Chick Fil A doesn't ever mind doing) and then I mix a packet of mayo and a packet of mustard and use it as a dipping sauce for my chicken. If I have the luxury of sitting down inside to eat or even eating as a passenger in the car, then I'll usually order a side salad. Today I just stuck with burger and tea, sweetened with one packet of sweet n low. We got a late start to dinner tonight, setting up my new scanner and my super slow laptop= us leaving for dinner@ 8:30, so we decided to go to Applebee's, they are open late and I've been meaning to scope out their new healthy menu items. I didn't really see anything that caught my eye, must of the meals were spicy and had shrimp. (I do not eat seafood except for tuna fish.) So I decided on my favorite meal pretty much anywhere which is a grilled chicken salad. I have yet to taste a bad chicken Caesar salad and Applebee's did not disappoint! It was so delicious, I practically licked the plate clean! The picture below does not do the salad justice!!

Low carb eating at Logans Roadhouse

Tonight I had dinner at Logans Roadhouse. On Mondays & Tuesday's they have 2 meals for $14.99, so we usually try to go there in those days. I ordered the Logans grilled chicken, it comes with a peppercorn dressing on top and its served on a bed of rice, but I order it with no rice, if you forget you can just really pick the chicken breast off of the rice. The meal comes with two sides, I'm not big on all veggies, but they do offer a vegetable skewer and seasoned veggies, and a house or Caesar salad. I ended up ordering two Caesar salads, one before my meal and one during my meal to eat with my chicken. I also had an unsweetened tea with a packet of sweet n low.

I've been on this crazy sleep schedule where I can't sleep at all at night and don't end up falling asleep until about 6-9am, and then don't wake up till 2-4 pm, and so I've slept through breakfast and dinner and I don't want to eat while I'm awake at night because I'm usually just laying in bed trying to fall asleep. So I haven't eaten lunch in the past two days. Tonight I took a sleep aide so hopefully it will work and tomorrow I can wake up at a decent time and get some stuff done!!

Back for real this time!

I've started back on this low carb journey of mine, with the help of Instagram!! It's been 7 days and I haven't fallen off of the wagon! I'm on Instagram @breakingupwithcarbs
I was only going to update my Instagram account from now on but then today I looked at my blog stats and I've already had over 400 views just this month!! So people are actually looking at this stuff! That pretty much amazes me and I feel like I need to keep it going! Here's what I've been eating in the past 7 days...
Lots of tortilla-less Mexican food, bun-less burgers, eggs, taco's and quesadillas made with whole wheat 3g net carb tortillas, tuna fish with boiled eggs, mayo & pickles, frozen Atkins meals, sugar free ice cream and popsicles, beef, pork, & chicken, chip-less nachos, and my favorite, Caesar salads!!
